MONDAY MEATBALL MADNESS

I whipped up some meatballs for the week [because I'm lazy]. It's super easy and it's healthy - and the process looks really pretty, so I thought I'd share it. This recipe makes about 25 jumbo meatballs, about 90 calories each.

  • 1kg minced chicken
  • 3 egg whites
  • 1 cup dried oats
  • 1 large yellow pepper
  • 1 medium onion
  • 1 tablespoon chopped garlic
  • 2 stalks of parsley
  • 3 chili padi [or not, if you're not a fan of spicy food]
  • 1-2 tablespoons of fish sauce or salt to taste
  • Optional: oregano or paprika [basically, you can put spices as you want]

Dump everything into a bowl.

Roll into balls and put them on a baking tray. Pop it into the oven at 190 degrees Celsius for 35 mins. If you're planning to store them in the fridge like I do, cook it slightly under and store them. When you want to eat them, just pop them back into the oven for ten minutes or till it turns a lovely shade of brown.
